I've been meaning to share these recipes and finally remembered to bring them upstairs!
Uncle Roger's Meatball Minestrone2 cans chicken broth
1 can beef broth
1 lb. frozen mixed vegetables
18 oz. frozen meatballs (I like the ones from Costco)
1 can stewed tomatoes
1 can kidney beans
1 1/2 tsp. dried Italian seasoningCook all together and serve over pasta. Garnish with parmesan cheese.
Buttermilk Scones2 cups all-purpose flour
1/3 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
6 tbsp. unsalted butter, chilled
1/2 cup buttermilk
1 large egg
1 1/2 tsp. vanilla extractPreheat oven to 400 degrees.
Mix flour through salt in food processor. Add butter and pulse until mixture resembles coarse crumbs. Add buttermilk, egg, and vanilla. Pulse to combine.
Next, add a combination of the following: dried fruit, nuts, chocolate. Knead lightly.
Pat the dough into an 8-inch circle on an ungreased baking sheet. Cut into 8 wedges, sprinkle with sugar, and bake for 18-20 minutes. Remove from oven, cool. for 5 minutes, and recut wedges.
My favorite combinations are dried cherries, pecans, and dark chocolate. Dried apricots, almonds, and white chocolate.
I just had to thank you for sharing your scone recipe. I love to bake but have never given scones a try until this weekend! They were so delicious and easy! I'm looking forward to making your meatball minestrone next. Meal planning and dinner ideas are harder for me to create so I'm definitely excited about a new recipe. Thanks!
